People always ask me "What does a clinical nutritionist do?". Fair question.  Other than clinically analyse dogs pathological issues and treat them with the right diet and supplementation, there is a LOT of research that goes behind it, specially in my case, perusing my PhD in Veterinary Nutrition.  
Many hours are spent in the lab analyzing what goes into pet food.  I'd like to add some to this list, and explain a little more in depth about some of the already mentioned ingredients.

Corn -  Hills and Royal Canin are big proponents of using corn, stating that it has many qualities, and that they remove the protein from it that causes the allergies. However, not only is corn an allergen, it's a thief.  Corn has an absorptive property. When it gets to the gut, not only does it not get fully digested, it can absorb nutrients, especially minerals and probiotics, and expel them into the fecal mass and out the body.   I don't care if it's wholegrain corn, corn is corn: avoid it at all cost. 

To add to the "junk fillers" list, some grocery store dog foods have started putting 'straight up' trash into their foods:
 Corn distillers dried grains with solubles: This is the trash created in ETHANOL distilleries.  It is a very controversial product even in its use in ruminant diets! In a research done by Penn State, scientists conclude that the use of distillers solubles decreases growth in calf.  Don't forget, corn itself is fine for calf, so just imagine how bad the solubles are for your dog, who isn't supposed to get whole grain corn in the first place!  
Wheat middlings: Also known as "mystery meal" because there is no true assertion of what this is.  All that is known is it may constitute of many different by products of mills, including floor sweepings.  

Chicken by product meal: Most of this CBPM comes from China.  First off, most of what goes in here is what we call the 3 d's: Dead, Diseased and Dying animals.  If an animal is considered to have died of some form of virus or bacteria, it isn't fit for human consumption, however it can be used for animal feed.  In an interview with a regional rep of Procter and Gambel 

Animal Digest: A very controversial ingredient, some manufacturers say they make their own, by cooking trimmings with enzymes (hence digest).  Others however purchase their digest from China, where even manure can be traced in the AD.  

Meat by product meal (MBPM): (This one is probably my greatest peeve). Lots of times, this shows up after beef by product and chicken (or poultry) by bi product meals.  Dear manufacturer, if you were kind enough to tell me that this is beef, and that is chicken, WHAT IN THE WORLD IN MEAT?!  Well, for starters most MBPM is made in China.  I have a great friend of mine in China who is a minister in an underground church, and helps me in any research that I need in the country.  We have pictures which are going to be published in my new book of a few of these "meat meal" plants.  Dead, diseased animals are the prime source of this meal.  Anything that is not fit for human consumption because of a disease.  It gets worse.  In China, there is a specific breed of dog, the pinyin, which is bred exclusively for eating.  Those dogs that don't make it through the quality control for human consumption go into the MBPM.  Yes, you may be feeding dog to your dog.  This is a serious matter, and the only way to stop it is not buying food with MBPMs.

Wow.  I knew that corn/middlings/digest/byproducts were bad, but I didn't know they were that bad.  And I can testify about corn.  My late soul mate, black diva Penny Lane (my avatar) would have gas that would blow out windows and knock buzzards off dump trucks if she ate any corn.  At all.  That is what started me with label reading.  No, label scruitinizing.
